After working at top Alsatian estate Binner in Alsace for several years, Evan moved back to Utah to start making his own wine. Initially using fruit mainly grown at Fox Hill Vineyards and Testa Vineyards in Mendocino county, he used to begin fermentation in California then transport his fermenting juice in a refrigerated truck to his home in Salt Lake City where he would complete the fermentation, ageing, and bottling process. He has since moved back to California to focus on the new vineyard projects and to co-farm Fox Hill Vineyard.
