The Lyle’s Menu Box highlights many elements of our philosophy and follows the structure of a meal in the restaurant starting from the home-made sourdough and butter and finishing with the iconic brown butter cakes.
The menu features a soup made with the finest delica pumpkins and the whey that is a by-product from our butter making process. This is the best time of year for crab and supports one of the hardest hit industries this year - the fishing industry. The steak is from the rib of a Cornish rare breed cow, hung for 3 months alongside beetroot that’s been slow-cooked in beetroot juice until the texture becomes chewy and intense. It finishes with a simple dessert made with the most fragrant quince and honey from East Sussex served with a vanilla custard.
