This meal takes advantage of an interesting time of year as we have the first of spring's green produce but the weather leaves you still needing some element of comfort.The vegetable broth includes young peas, green asparagus and broad beans in a light beef broth that takes 3 days to make. The best Scottish lobsters are making their way down and into a rich ‘porridge’ with wild garlic and barley. Our Quail have been cured in a maple, salt and buckwheat mix so that you can easily roast to a perfect crispy skin. A delicious combination along with mixed bolting brassicas from one of the biodynamic farms that we work with. Finish with a new dessert from us - Pauper’s Cake - which is made from dried sourdough bread, baked into a cake mix with lemon zest and golden syrup and served with roast Yorkshire rhubarb.
