A 100% method champenoise (created through the double fermentation in bottle popularised by Champagne) cider. Aged for 5 months in tank and 12 months in bottle to develop complexity. The result is a cider with aromatics of elderflower, brioche and green apples. Crisp with a light acidity and a slight earthiness coming through on the palate. smooth with a rounded finish and a long-lasting mousse.
